Abstract

In recent years, the usage of MSG (Monosodium Glutamate) has increased by an astounding number. MSG is applied on processed foods and enhances flavors, commonly used in Asian cuisine. It is said that MSG is truly unhealthy because increasing glutamate activity in human brain cells can cause harm, which proves that large doses of MSG can raise blood levels of glutamate. However, based on the evaluation from the Food Safety Management system, MSG is clarified to be a safe food additive by the Minister of Health Regulations. Therefore, PT SASA INTI has also been certified by some of the quality control safety food regulations such as ISO 9001: 2015, Hazard Analysis Critical Control Point, Food Safety System Certification, SNI, and Halal: MUI. PT SASA INTI Tbk is well-known as a leading manufacturer of sodium glutamate at home and abroad. This research was intended to gain data and information about the application of physics in machines used to make MSG. In this excursion study, the researchers gathered datas by taking notes on the company profile presentation of the production and interviewed the expert by an online session. Doing an interview helped the researchers get more in-depth data and information on what was being researched. The researchers concluded the answer to the three questions of the research; (1) how does the machine work in decalcifying the plant with a separation device? (2) how does centrifugal force work in machines? (3) What is the use of a separation system for fermentation, crystallization/concentration, and purification? The researcher employed 4 main theories from physics experts and combined them from the interview section, leading to a multiple law of physics. The Theories are used in the research are about gravity (1919), centrifugal force (1835), temperature (1850), and heat (1850). These theories were reviewed to help the researcher connect the relationship of physics with the MSGmaking machines. Keywords: physics, MSG, machine production, food safety management
