Abstract
Quality control is a process of checking and testing that is done to measure and ensure the quality of the product has been in accordance with the standards set by the company to prevent the product from failing or defecting in the production process. Shrimp-flavoured crackers are crackers made from tapioca flour and flavoured-shrimp and flavour enhancer. The quality of shrimp-flavoured crackers is determined by the quality of the ingredients it uses. In processing shrimp-flavoured crackers, many of the companies use finished spices obtained from suppliers as shrimp flavourings. In addition, tapioca flour, eggs, water, and sugar are needed, as well as salt that serves as a preservative to maintain the resistance of shrimp crackers produced. The study aims to answer three research questions; 1) What is the standard quality of shrimp-flavoured crackers set by UD Cipta Panganesia? 2) How is the application of quality control carried out by UD Cipta Panganesia to shrimp-flavoured cracker products? 3) What are the factors that cause damage to shrimp flavoured crackers during production? In order to obtain the data, researchers used interviews to get answers to research questions. Researchers conducted interviews with ud owner and founder Cipta Panganesia to clarify and obtain data in more depth. Based on the results of the study, researchers concluded that UD Cipta Panganesia has several standards that have been set in paying attention to the quality of its products. The standard can be seen from the shape, colour, and texture of shrimp-flavoured crackers produced by UD Cipta Panganesia. To maintain good product quality, UD Cipta Panganesia has implemented quality control in the form of supervision of raw materials, production processes, and finished products, and conducted consumer surveys so that the quality of shrimp-flavoured cracker products can continue to be improved. The causes of poor product quality are the inaccuracy of workers during the production process as well as uncertain weather conditions.
