Sterilization is a step to kill microorganisms and spores in food products so that food products can last longer. This process is carried out with an industrial machine which uses the laws of physics to work. This observation report aims to determine the principles of physics used in the machine, especially in the sterilization process that occurs in the manufacture of sardines. The main focus for this report is the retort machine and the applied physics principles. The method used in writing this report was a direct interview with CV Indo Jaya Pratama employees and listening to the explanation from CV Indo Jaya Pratama regarding the processing of sardines. From the results of observations and data obtained from CV Indo Jaya Pratama, it can be said that there are several physics principles used in the workings of the sardine sterilizer at CV Indo Jaya Pratama. Some of these laws of physics include the Gay-Lussac law and the First Law of Thermodynamics. From the results of the observations that have been made, it can be concluded that there are laws of physics that are useful for humans such as Gay-Lussac's Law and the First Law of Thermodynamics which can be applied in the mechanics of how machines work. sterilization of sardines.
