Abstract

Canning is a method of preserving food from spoilage by storing it in a hermetically sealed container, and then sterilized by heat, which was invented in the early 18th century and has been used by hundreds of countries around the world until now. As a part of food technology, the making process required industrial machine performance. The aims of this study are to discover how the canned fish are made by CV Indo Jaya Pratama factory, determine the law of thermodynamics used in the Exhaust Box machine, and also to calculate Exhaust Box’s electricity cost in a month. Research data were collected by direct explanation from one of Indo Jaya’s company representatives, with a Question and Answer (Q&A) session from the students afterward. Result of the research shows the Second Law of Thermodynamics and Electrical Energy Theory were involved in exhausting procedure. After a thorough analysis and review, it can be concluded that the Second Law of Thermodynamics and Electrical Energy Theory in physics were some of the important factors of the machine mechanism.
